As part of the continuing development of staff skills and the improvement of overall standards FFT arranged staff training for all mobile chefs at Millstead School. All FFT Mobile Chefs are expected to work to the highest degree and are used as ambassadors to promote the ethos and expectations of the company, sharing knowledge and experience with other school staff and leading by example.
The chefs were expected to arrive at the school with their chef whites, but were unaware of the task ahead. The challenge was that they were to provide a 2 course meal for 100 teaching staff, ensuring that it was cooked, served and presented to the highest standard. The menu comprised of;
Poached Salmon Fillet / Stir Fry Vegetables / Fragrant Rice / Sweet Chilli Sauce
Roast Chicken Supreme / Mashed Potato / Fine Beans / Bacon and Onion Gravy
Butternut Squash and Mushroom Wellington / Tomato Sauce / Buttered Greens
Sticky Toffee Pudding / Butterscotch Sauce / Vanilla Ice Cream
Fresh Fruit Salad
Excellent feedback from the school staff showed how this had proven to be a successful exercise. This is evidence that FFT mobile chefs understand and are capable of delivering a high standard of food and service in the school kitchens and therefore there should be no question that FFT can provide an excellent lunch time experience for the children. The message of ‘attention to detail’ had been received and this experience must be transferred into their day to day working in the schools as ‘ambassadors’ for Food For Thought.
